Recipe of the Month: Valentine’s Day Red Velvet Sandwich Cookies

Ingredients:

Cream Cheese Frosting

Makes 2 cups.

  • 4 ounces cream cheese, softened
  • ¼ cup unsalted butter
  • 1 ½ cups powdered sugar
  • ½ tsp vanilla extract
  • ⅛ teaspoon salt
  • ½-1 tablespoons heavy cream or milk

Red Velvet Roll-Outs:
Makes about 2 dozen 3″ sandwich cookies.

  • 1 cup unsalted butter
  • 2 cups confectioners’ sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 tbsp liquid or gel red food coloring
  • 2-3 tbsp milk
  • 1/2 cup cocoa powder
  • 1/4 cup buttermilk powder
  • 3 1/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt

Steps

Rollouts

  1. Cream together butter and confectioners sugar.
  2. Add the egg, vanilla, red food coloring, and milk and mix well.
  3. Start with 2 tablespoons of milk, then add the rest if the dough is a little dry after adding the flour mixture.
  4. Sift together the cocoa, buttermilk powder, flour, baking powder and salt and add to the wet ingredients.
  5. After mixing, roll out the dough on parchment paper to 1/4 inch thickness, dusting lightly with a mixture of flour and cocoa powder (for a suitable color) if necessary.
  6. Cut into desired shapes and place on a baking sheet lined with parchment paper. Bake at 400 degrees for 6-7 minutes.
  7. Cookies are ready to come out of the oven when the tips are smooth and not shiny, and inside is dry.

Frosting

  1. Beat cream cheese and butter. Add powdered sugar one cup at a time until well incorporated.
  2. Add vanilla, salt, and heavy cream/milk until desired consistency is reached.
  3. Spread frosting on cooled cookies.
