March Recipe of the Month: The Most Potent Potatoes
Ingredients:
3 or 4 boiled white potatoes
2 eggs to use for an egg wash
Bread crumbs
3 to 4 tablespoons finely chopped cilantro
2 tablespoons finely chopped onions
1 teaspoon chilly powder
Dash of salt
Oil
Ingredients for the filling:
½ cup shredded coconut which can be substituted with crushed roasted cashews as well
¼ cup golden raisins
1 tablespoon finely chopped mint leaves
1 tablespoons finely chopped cilantro
½ teaspoon ground black pepper
Directions:
1. First, mix all the ingredients needed for the filling together in a bowl.
2. While mixing the ingredients, also heat one tablespoon of oil in a pan.
3. After the oil is heated, add the mixture into the pan and turn off the heat.
4. Stir well; the warmth of the pan should be enough to roast the mixture.
For the crust:
5. Mash the boiled potatoes and mix into it the onion, cilantro, salt, and chilly powder.
6. Divide the mixture into small portions, and shape them all into a patty.
7. Add ½ tablespoon of the filling on the center of each patty, and wrap the patty around the filling until it is round.
8. Continue to do this until all of the potato mixture is used.
Frying;
9. Heat some oil in a frying pan.
10. Dip the potato balls into the egg wash and roll it in bread crumbs until it is covered.
11. After rolling them into the bread crumbs, deep fry them all.
12. Set them aside on a paper towel to soak up the excess oil.
13. Enjoy with ketchup and cry tears of joy.
