Soft-baked Pumpkin Chocolate Chip Cookies
Chocolate chip cookies are a classic, but adding a fall twist to these traditional cookies makes them even more sophisticated. These pumpkin cookies are fragrant yet delicious; they’ll make your home smell cozy and full of pumpkin spice!
Ingredients:
- ⅓ cup of pumpkin puree
- ½ cup of melted unsalted butter
- ¾ cup of granulated sugar
- ½ teaspoon of vanilla extract
- 1 egg
- 1 ½ all-purpose flour
- ¼ teaspoon of salt
- Pinch of baking powder
- A sprinkle of cinnamon
- ½ cup of chocolate chips
Directions:
- Add the melted butter, pumpkin puree, and granulated sugar in a large mixing bowl. Whisk until thoroughly combined.
- Crack in the egg and add vanilla extract. Continue to stir until evenly incorporated.
- Fold in the flour, salt, baking powder, cinnamon, and chocolate chips using a rubber spatula.
- Once uniform, cover the bowl and refrigerate for around 30 minutes *highly recommended*
- Preheat oven to 350℉.
- Line a baking tray with parchment paper.
- Use a scooper to scoop chunks of dough onto the parchment paper.
- Bake for 15-20 minutes or until golden brown
