Recipe of the Month: Puff Pastry Delight

This simple recipe is the perfect dessert or appetizer for any occasion: breakfast, lunch, dinner, or just as a snack!

Ingredients: 

  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 sheets puff pastry, thawed
  • Strawberries and raspberries and/or blackberries
  • Preferred amount of sugar (for garnish)

Instructions: 

  1. Preheat oven to 400ºF (200ºC), and prepare two cookie sheets or oven trays with parchment paper.
  2. In a bowl, mix the cream cheese, powdered sugar, and vanilla extract until fully combined.
  3. Lay out your puff pastry sheet on a lightly floured surface.
  4. Cut equal squares out of the puff pastry sheet.
  5. Cut out an L shape on the bottom left and top right corner of each square. The L shapes should reach almost around the whole square, but should not touch. You should have two L shaped flaps that can be folded over.
  6. Fold the upper right flap down to the inner bottom corner, and vice versa. You will now have a diamond shape.
  7. Place a small scoop of the cream cheese filling in the middle, and then press the berries of your choice into the filling.
  8. Repeat with the remaining pastry squares and place them onto the parchment covered baking sheet or tray.
  9. Bake for 15-20 minutes or until pastry is golden brown and puffed.
  10. Sift powdered sugar on top to garnish if desired and enjoy!

 

This pastry features sweet cream cheese filling under a juicy strawberry, all surrounded by flaky puff pastry and topped with powdered sugar.
