Recipe of the Month: Puff Pastry Delight
This simple recipe is the perfect dessert or appetizer for any occasion: breakfast, lunch, dinner, or just as a snack!
Ingredients:
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- 2 sheets puff pastry, thawed
- Strawberries and raspberries and/or blackberries
- Preferred amount of sugar (for garnish)
Instructions:
- Preheat oven to 400ºF (200ºC), and prepare two cookie sheets or oven trays with parchment paper.
- In a bowl, mix the cream cheese, powdered sugar, and vanilla extract until fully combined.
- Lay out your puff pastry sheet on a lightly floured surface.
- Cut equal squares out of the puff pastry sheet.
- Cut out an L shape on the bottom left and top right corner of each square. The L shapes should reach almost around the whole square, but should not touch. You should have two L shaped flaps that can be folded over.
- Fold the upper right flap down to the inner bottom corner, and vice versa. You will now have a diamond shape.
- Place a small scoop of the cream cheese filling in the middle, and then press the berries of your choice into the filling.
- Repeat with the remaining pastry squares and place them onto the parchment covered baking sheet or tray.
- Bake for 15-20 minutes or until pastry is golden brown and puffed.
- Sift powdered sugar on top to garnish if desired and enjoy!
