Recipe of the Month: Valentine’s Day Red Velvet Sandwich Cookies
Ingredients:
Cream Cheese Frosting
Makes 2 cups.
- 4 ounces cream cheese, softened
- ¼ cup unsalted butter
- 1 ½ cups powdered sugar
- ½ tsp vanilla extract
- ⅛ teaspoon salt
- ½-1 tablespoons heavy cream or milk
Red Velvet Roll-Outs:
Makes about 2 dozen 3″ sandwich cookies.
- 1 cup unsalted butter
- 2 cups confectioners’ sugar
- 1 egg
- 2 tsp vanilla extract
- 1 tbsp liquid or gel red food coloring
- 2-3 tbsp milk
- 1/2 cup cocoa powder
- 1/4 cup buttermilk powder
- 3 1/4 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
Steps
Rollouts
- Cream together butter and confectioners sugar.
- Add the egg, vanilla, red food coloring, and milk and mix well.
- Start with 2 tablespoons of milk, then add the rest if the dough is a little dry after adding the flour mixture.
- Sift together the cocoa, buttermilk powder, flour, baking powder and salt and add to the wet ingredients.
- After mixing, roll out the dough on parchment paper to 1/4 inch thickness, dusting lightly with a mixture of flour and cocoa powder (for a suitable color) if necessary.
- Cut into desired shapes and place on a baking sheet lined with parchment paper. Bake at 400 degrees for 6-7 minutes.
- Cookies are ready to come out of the oven when the tips are smooth and not shiny, and inside is dry.
Frosting
- Beat cream cheese and butter. Add powdered sugar one cup at a time until well incorporated.
- Add vanilla, salt, and heavy cream/milk until desired consistency is reached.
- Spread frosting on cooled cookies.
